Summer is just around the corner and it’s time for an Ice Cream party or two! One of my favorite summer treats are these Peanut Butter Ice Cream Sandwiches. My son’s love it when I make these and they are usually gone in seconds. The best part is that these are super easy to make and oh, so delicious! I’m excited to share them with you for this week’s Whip It Up Wednesday.
So let’s get started!
Easy Peanut Butter Ice Cream Sandwiches
Ingredients:
- 1 cup peanut butter
- 1 cup sugar
- 1 egg
- Magic Shell Chocolate Flavored Topping
- Vanilla Ice Cream
- Sprinkles
Heat oven to 375 degrees. Mix peanut butter, egg and sugar in a small mixing bowl.
Roll the dough into 1 inch balls and place on an ungreased cookie sheet. Lightly flatten with the palm of your hand. Bake for 12 minutes. Once baked, let cookies cool then put them in the freezer for 15 mins.

Next, gather your ice cream, scoop and Magic Shell. Sandwich a small scoop of ice cream between two cookies and then freeze for 15 minutes.
Drip Magic Shell over the sandwich, starting with the ice cream portion.
Then move on to the rest of the cookie sandwich. Warning, this is the messy part.
Next, add some sprinkles and freeze until you are ready to serve!
Be sure to make at least two batches, these will be the first treats to be eaten for sure!
