Banana bread (or as my 3 year old calls it, Banana Cake) is one of our favorite treats around here. My son loves “cake” (muffins, sweet breads, etc.) minus the icing so these cookies are great for his sweet tooth. This recipe was inspired by my mom’s favorite Banana Pudding Cake. I think these cookies would be even tastier with the addition of a few chocolate chips but neither my husband nor son likes chocolate so we skipped them in this recipe.
Banana Bread Cookies Recipe
This recipe makes about 3 dozen large cookies. I use a small scoop to shape the cookies so my cookies are about 2 tablespoons in size (they end up the size of muffin tops). If your cookies are smaller, you’ll want to reduce the cooking time by about 2 minutes.
Ingredients:
- 6 tablespoons butter, unsalted and slightly melted
- ½ cup sugar
- 2 eggs
- 1 cup flour
- 1 package (4-serving size) instant banana pudding mix
- 1 teaspoon baking powder
- 2 bananas, mashed
Directions:
- Preheat oven to 350F.
- In a large bowl, beat butter with sugar until creamy.
- Add eggs and beat until well mixed.
- Add flour, pudding mix and baking powder. Beat until well mixed.
- Add bananas and beat just until mixed.
- Use a small scoop to make cookie sizes 2 tablespoons/cookie. Drop onto greased cookie sheets.
- Bake for 14 minutes until bottoms are slightly browned.

Just made these to add to my Christmas gift packages. They are amazing so light they remind me of french madeleines. I made the recipe as cookies and mini muffins. I liked the cookies are much better as the texture really shines. I dusted the tops with powdered sugar (snow) for the holidays. thanks for Sharing.
